Canjiquinha is a typical Brazilian delicacy from the state of Minas Gerais. The corn kernels are ground, but not so finely that they can pass through a sieve.
The kernels are then cooked with pork (usually ribs) and homemade spices. Canjiquinha is traditionally served in a deep plate and garnished with chopped, sautéed kale and black pepper.
