Chimichurri is a spicy sauce that is used as an ingredient in cooking or as a table condiment for grilled meat. It is a specialty of Argentine cuisine and consists of finely chopped parsley, garlic, paprika, olive oil, oregano and vinegar, among other things.
The word Chimichurri means "a mix of everything" in Basque Spanish. In Argentina it is a staple food: it is passed around in a large bowl at Asados (barbecues) so that it creates a communal experience. Chimichurri goes well with salt crackers, on fried eggs with fresh tomatoes and avocados, with potatoes, on grilled vegetables with tofu or with fish fillet.
