In Mexiko und Mittelamerika (außer Panama) werden frische Maiskörner „elote" genannt. Das Wort stammt aus dem Nahuatl und bedeutet "zarte Ähre".

Elote wird in Mexiko, El Salvador und im Süden der Vereinigten Staaten als Snack gegessen: Dazu werden die Maiskörner im Wasser mit Salz und Gewürzen wie Epazote, Hierba de Santa María oder Pericón gekocht und mit verschiedenen Zutaten wie Butter oder Mayonnaise und geriebenem Käse und im speziellen Fall Mexikos alternativ mit Chili, Zitronensaft und Salz gewürzt.
