The Pequi fruit is very popular in Brazil, especially in the states of Goiás and Minas Gerais. The fruits are eaten raw, cooked with rice but also processed into liqueur, juice and ice. The processing of the fruit is deeply rooted in the regional culture and gastronomy of the inhabitants of the savannah area Cerrado in the state of Minas Gerais.
The Pequi oil from D Horta is extracted directly as edible oil from the fruit core cold pressed. For a liter of oil more than 1000 fruits have to be processed. The result is a yellow-orange oil with a fruity, pleasant aroma, which is slightly reminiscent of coconut. In Brazilian cuisine Pequi oil is very popular in combination with rice, chicken or salad.
