Black-eyed beans belong to the legume family and have a pale, creamy colour and a characteristic black spot that resembles an eye. They are believed to have originated in North Africa, where they have been eaten for centuries, and were probably brought to the Americas by Spanish explorers and enslaved people.
Like most other beans, they can be used in a variety of ways: As the main ingredient in a soup, as a side dish, as a puree, in a stew or in a casserole. They can also be cooked, cooled and dressed with olive oil and vinegar as a summer salad.
Black-eyed beans taste like earthy white beans with a creamy consistency.
