Coconut sugar is the boiled and dried juice of the coconut blossom before it becomes coconut. If one cuts the flower bud of the coconut palm, there emerges a juice, which is called coconut nectar. This nectar is collected and cooked until it thickens and forms crystals.
A coconut palm can produce nectar for over 70 years. Therefore, coconut sugar is considered one of the world s most sustainable sweetener species per year, as the trees use minimal amounts of water. In addition, this sugar has no artificial ingredients and is not chemically altered in any way.
Coconut sugar provides more vitamins and minerals than white table sugar. It contains traces of vitamin C, potassium, phosphorus, magnesium, calcium, zinc, iron and copper. Coconut sugar also provides small amounts of phytochemicals such as flavonoids, polyphenols and antioxidants.
